Paleo Pumpkin Granola

I think Iām ready for fall! This is an easy homemade breakfast of pumpkin granola you can serve with unsweetened, organic applesauce and almond milk for a satisfying way to start your day.
Just what my tummy desired
Feel free to replace this combination of nuts with any others you have on hand, crushed pecans, hazelnuts, or sunflower and pumpkin seeds for a nut-free version! :
1/2 cup crushed almonds
1/2 cup crushed walnuts
1/4 cup shredded coconut
1/4 cup hemp seeds
2 tbsp flax seeds
1/4 cup tigernut flour
1/3 cup pumpkin puree
2 tbsp coconut oil
1 date minced
1 tsp Cinnamon
1/2 tsp Ginger
1 tbsp maple syrup
- mixed well
- spread on baking sheet lined with parchment paper
- Bake at 350 for about 15-20 minutes until browned
