Paleo Pumpkin Granola

I think I’m ready for fall! This is an easy homemade breakfast of pumpkin granola you can serve with unsweetened, organic applesauce and almond milk for a satisfying way to start your day.
Just what my tummy desired 🍁
Feel free to replace this combination of nuts with any others you have on hand, crushed pecans, hazelnuts, or sunflower and pumpkin seeds for a nut-free version! :
1/2 cup crushed almonds
1/2 cup crushed walnuts
1/4 cup shredded coconut
1/4 cup hemp seeds
2 tbsp flax seeds
1/4 cup tigernut flour
1/3 cup pumpkin puree
2 tbsp coconut oil
1 date minced
1 tsp Cinnamon
1/2 tsp Ginger
1 tbsp maple syrup
- mixed well
- spread on baking sheet lined with parchment paper
- Bake at 350 for about 15-20 minutes until browned
